Easy Healthy Breakfasts with Recipes

Being a uni student and just an all round useless person when it comes to eating proper meals and eating breakfast I have decided to share with you some of my favourite breakfasts, that often I meal prep and the beginning of the week and enjoy throughout the week so I don't have to worryaboutt missing a meal.


Egg "muffins"



I am not really a fan o solid food in the mornings however if i am working night shift I like to have something to eat before I go to uni (or bed).

Serves 6

Ingredients:
6 Eggs
Mixed Veggies
Paprika

1. Preheat oven to 180C Bake. Whisk the eggs until they are smooth.
2. Pour the whisked egg into a muffin tray.
3. Add as many mixed veggies as you desire to the muffin tins and sprinkle with a little paprika.
4. Bake for 15mins or until egg is cooked through.
5. Enjoy.

NB: If you are meat eater you can add bacon, I put this around the outside of the muffin tin and pour the egg and veggies in the centre.


Smoothie



I love this one for mornings I want something a little more substantial you can also do the same thing as the instruction or you can chuck all the ingredients in a pot on the stove and make a delicious porridge and maybe pop some honey on top as well.

1 cup Almond Milk (or whatever milk you want, I prefer to use a non-dairy milk)
1/2 Cup Oats
150gms Mixed berries

1. leave the oats in the milk overnight to soak. (This isn't necessary however it means the oats are a little finer and creamier)
2. Chuck everything in a blender or Nutri-bullet or whatever you want in order to blend it all together to create a delicious drink.

NB: for a slight variation you can add coconut to the top or instead of turning this into a drink turn it into a porridge with all the same ingredients in a pot on the stove. If i do this I add about 1/4 Cup of shredded coconut to add a little more flavour.



Green "Juice"

I have juice on quotation marks because well I just shove everything in a blender and it could also be called a smoothie but whatever.

Serving: At least 2

1 Cup Spinach
1 Cup Kale
2 Bananas
1 Cup Pineapple (or you can substitute this with pineapple juice although I find it is too sweet)
2 tsp Chia Seeds
4 tsp Spirulina powder
2 tsp Cinnamon
Water or coconut water

1. Chuck everything in a blender
2. blend.
3. Enjoy

NB: Sometimes it can be a little chunky depending on how many bananas you use and how much water etc so often I put everything in like above, then when I pour it into my glass I fill the glass half way and add water the rest of the way.

Eating Disorders

Eating disorders are the branch that overarches anorexia, bulimia and binge eating disorder.

There is nothing that is a clear cause of an eating disorder, which can make things harder for friends and family to understand. Eating disorders are serious and people with this disorder need support and care to get the right help and get well again.

Symptoms to look for if you are concerned someone has an eating disorder include:
  • ·      Isolation from others.
  • ·      Secret eating and purging through laxatives or vomiting.
  • ·      Spending long amounts of time on the toilet, specifically after meals.
  • ·      Strenuous exercise routine, even when injured or unwell.
  • ·      Severe weight changes.

·       

These are just some of the signs someone has an eating disorder. If you suspect a loved one has an eating disorder, let them know that you are worried and that you care about them.
Encourage them to see their doctor or school counsellor, but don’t force them to (unless they are significantly underweight and their health it at risk).  
Treatment Options

Therapy: therapy can address the emotional needs of your thinking, behaviours, relationships and environment. You will be speaking with a trained specialist and they can help you get through this time.

Medication: Although there is no medication that can directly treat an eating disorder, there are medications that can help with related issues.

A Balanced Lifestyle

A balanced lifestyle is important and something that I am realising more and more. I haven't lived at home for over a year now and I have learnt a lot in that time. For example, exercise isn't optional ~I know, what right?~ but also that it isn't important that we have a balance of work and play. Right in this moment of time i am potentially the opposite of a balance life as I am writing this post at 2:10am and just finished part of an assignment about 20 minutes ago, but normally I am pretty good ~well, as good as someone my age can be~. One of my goals this year is too get my shit together, I told my sister this and she said you're only 18 you don't have to worry about that but I left school early and I have an amazing advantage to other people my age why would I waste the next ten years when i can get my shit together now and accomplish more later on. Part of getting my shit together is creating a healthy balanced lifestyle.



These are my top 5 tips on how to live a balanced lifestyle:

1. Plan. I am an obsessive planner so this come naturally. I find that planning and making lists of what I have to do helps my mind to relax a little and I have a everything I need to know in one convenient place.

2. Exercise. I know it can sometimes seen like a drag. Today, I didn't eat to go for a walk but I got changed put my shoes on and guess what I still didn't want to go, hopped in my car and drove to the park. Yep, you guessed right I still didn't want to go for a run. Every part of me wanted to go back to my car and get chicken nuggets, but i didn't I started running ~let's be real, its more of a slow jog~ and I still didn't want to be there after abut ten minutes I felt better and actually wanted to be there. It also has made me feel really god the rest of the day and it is important to get exercise everyday.

Health and Fitness apps that I love

Part of my new years resolutions this year is to get fit and healthy, and basically just become the best me possible, cheesy I know. This is some of my favourite fitness apps that I use regularly. I am also trying out some more apps at the moment and would love to hear what apps you recomend.



1. Running

This app is awesome, especially if you want to get into running. I use to love running, in the afternoons, I would go for runs around the farm and i loved it. I always related running to feeling empowered, owning your body and pushing yourself to new strengths, running faster and longer each time. With this app you can choose from 6 options which are; Walking for weight loss, start running, running for weight loss, 5k and 10k. Later this year I want to do a 10k, which also makes this app awesome as I can work towards that goal, I have done part of the running for weight loss however i have decided to go back to starting to run as well I am going to be real I hated it, loved the feeling but I was also like screw this. I'm also not running on a flat surface (there are some hills, like a lot, I hate them) and i was running for a lot longer amounts than the workouts suggested, so I am going back to basics and 'learning' to run again.

2. Blogilates


I have used the blogilates app for probably two years now and I really like it for days that I don't have time to workout or I don't have access to somewhere to workout. You can do pilates anywhere anytime which is something I love. The videos that are apart of the app are so handy and I love that you can tick off each day because well I love lists, and the feeling of accomplishment when I tick things off.

3. Calm


Although this app is not a fitness app, it is to do with wellbeing. It is so important to take time to ourselves and relax. It is simple little 10min meditation sessions each day that help to relax your mind and be really prepared for the day.

Gluten-Free Chickpea Coconut Curry Recipe

I love a good curry and being a studentI have found that this one is easy to make and fairly cheap as well. You could also add broccoli and potatoe if you wanted more variety.




Chickpea Coconut Curry

Serves: 4

Time: 20 Minutes

Ingredients:


2 cans of drained chickpeas
1 cup shredded coconut
1 onion
3tsp garlic
3tsp ginger
4tsp coriander
2tsp fennel seeds
1tsp cinnamon
1 tsp cayenne pepper
1 tsp turmeric
2 tomatoes
1 can tomatoes
1tsp salt
¼ cup water
1 can coconut cream






Method:

1   Heat a frying pan over medium to high heat. Place all of the shredded coconut into the pan lightly toasting, stirring occasionally to ensure it doesn’t burn. Add the water eventually the coconut will break down although this does take time (if you are impatient like me, you can just use the toasted shredded coconut.) once
  
2 Add the onion, garlic, ginger and cook until translucent.

3 Add the ground spices and mix together, for about a minute for everything to be mixed together. Add tomatoes and a splash of water and cook until the tomatoes are tender, this will take approximately five minutes depending on how hard the tomatoes are. If there are still bits left mash them with a fork.

4 Add the shredded coconut mix, and chickpeas giving them all a stir around then add the coconut cream stirring to ensure it is all mixed together.


5  Let simmer for 5 to ten minutes and serve with rice.

Getting Fit and Healthy

Getting fit has been something I have wanted to do for a while. I use to be fit, play sport, go running and all of that crap, but I got depression and all of that stopped and that is literally my only excuse. Fitness to me is being able to do what you want when you want. Going on a run Sunday Morning because you can and want to. Just being able to do shit without thinking will I die? (Sorry, just being real).



This is complicated, okay not really but whatever. I want to start eating whole healthy foods. I also want to cut out red meat (eventually white, and seafood etc.) and slowly eventually making my way to plant based. I don't know if that will happen but it is something that I at this very moment in time want to do. In a year or 3 months if I don't want to anyone I won't but at the moment I am heading that direction. I am currently full of dairy and meaty goodness, and am taking SMALL steps. For example I am attempting to make the rest of January a red meat free zone (bare in mind I am writing this on the 7th so don't go saying its only a week) I will see how that goes then carry out or change or whatever I decide. I have already cut out junk food (homemade pizza doesn't count, so shut up). Good things take time and changing my diet overnight isn't something I plan to do.

In terms of fitness I am starting to walk a few times a week, I also have plans to do a 12km walk or run (haven't decided yet) this year which gives me something to work towards. I am excited to be at the same fitness point I was at  a few years ago. I want to go out and explore different places by foot and just live life and be happy and all that crap. I am also going to start at home yoga and pilates to help with that whole thang.



I feel like people that know me are going to be like it also wouldn't kill you to loose a few kgs. Yes ok I know I have gained weight in the last few years. I KNOW. Obviously, this is something that will happen as I get healthy and fitter but in all complete honesty it's not something I am like this is what I want to do. I want to be happy, healthy and fit. I want to feel good and I would be happy loosing weight but at the end of the day just because I loose weight doesn't mean that I will instantly be happy. Happiness I think will come with being healthy and fit, which to me is more important.

Healthy Summer Breakfasts with Recipes

Here are my five delicious, cheap and healthy breakfasts that are great for everyday!


Pink Summer Smoothie



1 Cup Strawberries
3/4 Cup Frozen Berries
3/4 Cup Coconut Water
3/4 Coconut Milk
1/2 Cup Chopped Pineapple (Frozen works, but fresh is better)
1 Small Beetroot (Tinned works)

Blend them altogether and enjoy!



Fruit



A great quick and easy breakfast is different fruits all sliced up together. It's also a super refreshing and light breakfast which makes it great for every day.



Christmas Oats



Ingredients:
¼ tsp Cinnamon
¼ tsp Ground cloves
¼ tsp Allspice
¼ tsp Ground Ginger
¼ tsp Nutmeg
1 tsp Vanilla essence
1 Cup Oats


Directions:
1.     Combine all ingredients in a small bowl or container, and soread evenly on a baking tray
2.     Bake on 250C for 20 minutes
3.    Cool, and place in a bowl adding milk and toppings (if desired) these can include berries, fruit, seeds, or nuts. A special treat can include grated dark chocolate. Then, enjoy!

Pancakes:


Ingredients:
2 eggs
½ tsp Cinnamon
½ cup ground oats
1 small banana
1 tsp almond butter

Directions:
1.     Blend all the ingredients together, adding more water if needed.
2.      Then heat a skillet or frying pan to medium heat with almond butter and cook.
3.     Plate, add desired toppings and enjoy.

1/2 cup coconut water
½ cup water
½ cup oats
150gm Berries

Directions:
1.     Blend together all the ingredients.
2.     Pour in a glass and serve!
